  • 6 eggs, separated
  • 1 cup sugar
  • 1 1/3 cup cake flour
  • 1 tsp. lemon extract
  • ¾ cup fiesta Desiccated Coconut, Macaroon


  1. Pre-heat oven to 325 degrees Fahrenheit
  2. Beat the egg yolks, mix well with sugar, four, and lemon extract. Set aside.
  3. Beat egg whites until thick. Fold into the yolk and flour mixture and add the Fiesta desiccated coconut.
  4. Pour into a 13” x 9” 2” rectangular pan and bake for 35 – 40 minutes, until done.
