  • ½ cup butter
  • cup light brown sugar
  • cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ¾ tsp baking soda
  • 1 ½ cups Fiesta Desiccated Coconut Shreds


  1. Preheat the oven to 350°F (177°C) and line baking trays with parchment paper.
  2. Cream together the butter and sugars until light and fluffy.
  3. Slowly add the egg and mix until well incorporated.
  4. Sift together the baking soda and all-purpose flour.
  5. Add to the mixture and mix until a thick dough forms.
  6. Fold in the Fiesta Desiccated Coconut Shreds.
  7. Rest the dough in the fridge for at least 30 minutes or overnight.
  8. Roll the dough into balls, lightly flatten them, and bake for 10-12 minutes or until the edges are slightly brown.
  9. Transfer to a wire rack and let cool completely.
