Ingredients

  • 2 cups all-purpose flour
  • 3 tbsp granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • cup Fiesta Desiccated Coconut Shreds
  • 2 cups Fiesta Coconut Milk Powder
  • 2 tbsp vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract

Procedure

  1. In a large bowl, combine the flour, sugar, baking powder, Fiesta Desiccated Coconut Shred, and salt.
  2. In a separate bowl, mix together the Fiesta Coconut Milk Powder, vegetable oil, eggs, and vanilla extract.
  3. Mix the wet ingredients into the dry ingredients, taking care not to overmix.
  4. Let the mixture sit for 5 minutes. Preheat a non-stick pan or griddle over medium heat.
  5. Using a jug, pour the mixture into the pan and cook until golden brown on both sides.
