- 6 eggs, separated
- 1 cup sugar
- 1 1/3 cup cake flour
- 1 tsp. lemon extract
- ¾ cup fiesta Desiccated Coconut, Macaroon
- Pre-heat oven to 325 degrees Fahrenheit
- Beat the egg yolks, mix well with sugar, four, and lemon extract. Set aside.
- Beat egg whites until thick. Fold into the yolk and flour mixture and add the fiesta desiccated coconut.
- Pour into a 13” x 9” 2” rectangular pan and bake for 35-40 minutes, until done.
